Bistecca alla fiorentina [Florentine style steak]

Ingredients

Bistecca alla fiorentina [Florentine style steak] 1 T-bone steak (about 800 gr in weight)
extra virgin olive oil
salt and pepper

Method

The Florentine steak is a rib chop without the fillet. For it to be just right, the cut should include both the rib and the under rib, for a thickness of 2.5 or 3 cm. Heat the grill or (preferably) light the barbecue. Sprinkle both sides of the steak with pepper and lay it on the grill, keeping it at some distance from the embers. Cook for 5 minutes, then turn over and season tyhe cooked side with more salt. Cook the other side for 5 more minutes, and again season it with salt. The perfect Florentine style steak should still be very rare inside. Remove from the grill and brush with olive oil.
